INGREDIENTS

2 large sweet potatoes, or 3 medium sweet potatoes
1/4 cup butter, melted
3 garlic cloves, minced
1 tablespoon thyme leaves
kosher salt
Freshly ground black pepper
small pinch nutmeg
1/2 cup freshly grated Parmesan

How to make Smashed Sweet Potatoes

Step 1: Prepare the oven. Preheat it to 425 degrees.

Step 2: Into inch thick rounds, slice the potatoes.

Step 3: Add the butter, garlic, and thyme and season with salt, pepper, and a pinch of nutmeg in a small bowl, then whisk to combine. Onto the potato rounds, pour the butter mixture, and toss to coat.

Step 4: On a large baking sheet, transfer the sweet potatoes into an even layer about an inch apart. Place in the preheated oven and bake for about 25 to 30 minutes until the potatoes are fork-tender. When done, remove the baking sheet from the oven and set the oven broiler to medium.

Step 5: In the meantime, smash the slices of potato using a fork, potato masher, or the flat bottom of a glass. Return to the oven and broil the mashed potatoes for about 3 to 5 minutes until golden and crispy.

Step 6: Before serving, sprinkle the smashed potatoes with freshly grated Parmesan. Enjoy!
