Smoked Sausage and Potato Skillet

Sausage and potato complete this delicious, filling meal. My kids favourite and my husband’s most requested. Our week will never be complete without this amazing dish!
This is excellent for busy days. Super simple, not fussy, and comes out great always. The ingredients are mostly pantry ingredients so you don’t need to run to the grocery, just grab and cook. I learned this very recipe from my husband. He is an amazing cook but he prefers me to do the cooking. I like it though because I love food! And this dish captured my heart in an instant! This smoked sausage and potato skillet has been one of my go-to. I promise this worth everything!

Ingredients

2 large russet potatoes, cut into 1” cubes
14 oz smoked sausage, sliced thin
1 small onion, chopped
1/2 c chopped bell pepper, green or red
1 clove garlic, minced
1/4 chicken stock
1 1/2 tsp paprika
1/4 tsp salt and pepper
1/4 tsp dried parsley
2 tbsp vegetable oil

How to make Smoked Sausage and Potato Skillet

Step 1: Heat olive oil in a large skillet over medium heat.

Step 2: Once hot, add in the smoked sausage and cook until brown.

Step 3: Remove from the skillet the cooked sausage and add the potatoes into the pan. Continue to cook until the potatoes are brown and tender.

Step 4: Add in the onions and garlic. Season with pepper and saute for about 5 minutes or until the onions are translucent and the garlic is fragrant.

Step 5: Add the chicken stock into the skillet and continue to cook, covered for another 5 minutes. Stirring often.

Step 6: Remove the cover and stir in the spices.

Step 7: And add the cooked sausage back into the pan.
