Mouthwatering! Throw this incredible chicken dish in a snap with only a few simple ingredients and steps. Grill or broil the seasoned chicken, either way, the result is undeniably delicious! And the cheese certainly made this! I am confident you’ll love the tender and juicy chicken and the spinach and mushroom sauce, and don’t forget the melted cheese on top! Ingredients
1-1/2 tsp olive oil
1-3/4 c sliced fresh mushrooms
3 green onions, sliced
3 c fresh baby spinach
2 tbsp chopped pecans
4 boneless skinless chicken breast halves (4 oz each)
1/2 tsp rotisserie chicken seasoning
2 slices reduced-fat provolone cheese, halved
How to make Spinach and Mushroom Smothered Chicken
Step 1: Prepare the grill or broiler. Preheat.
Step 2: Heat oil in a large skillet over medium-high heat. Once the oil is hot, saute the mushrooms and green onions until soft.
Step 3: Add the spinach and pecans to the skillet, stir, and continue to cook until the spinach has wilted. Take out from the heat and keep warm.
Step 4: Season the chicken with rotisserie seasoning. Place on an oiled grill rack, cover, and grill over medium heat. Or broil on a greased broiler at least 4 inches away from heat for about 4 to 5 minutes on each side until a meat thermometer reached 165 degrees.
Step 5: Add cheese on top and continue to grill or broil until the cheese has melted.
Step 6: Once done, serve with the mushroom mixture on top. Enjoy!
