Spinach Salad with Warm Bacon-Mustard Dressing

A lovely spinach salad with warm bacon-mustard dressing – an excellent side or eaten as is. Very light, has great textures and flavours. One of my favourite salad recipes because it’s healthy, light, and made with a few simple ingredients not to mention it has bacon. Everything with bacon is a must!

This is one of my go-to for when I have guests coming over. It’s the perfect accompaniment for many meals. And all love this simple, easy, and quick spinach salad.

Ingredients

1 (10 ounces) bag baby spinach leaves
4 large eggs hard-cooked eggs, peeled and sliced
1 cup sliced mushrooms
4 piece (blank)s strips crisply cooked bacon, crumbled
10 ounces Swiss cheese, shredded
½ cup toasted sliced almonds
1 tablespoon olive oil
1 large shallot, minced
1 teaspoon garlic, minced
⅓ cup white wine vinegar
⅓ cup Dijon mustard
⅓ cup honey
2 piece (blank)s strips crisply cooked bacon, crumbled
salt and pepper to taste

How to make Spinach Salad with Warm Bacon-Mustard Dressing

Step 1: In a large serving bowl, add the spinach and top with hard-cooked eggs, followed by 4 strips of crumbled bacon, Swiss cheese, and almonds.

Step 2: In a small skillet, heat the olive oil over medium heat. Saute the shallots and garlic. Cook for about 2 minutes or until softened and translucent.

Step 3: Add in the vinegar, Dijon mustard, honey, and 2 strips of crumbled bacon. Stir well and season with salt and pepper. Continue cooking until hot.

Step 4: Once done, remove from the heat and pour over the spinach. Toss to coat.

Step 5: Serve and enjoy!
