Ingredients
4 thick-cut boneless pork chops, about 6 ounces each
1 tbsp olive oil or avocado oil
1 tsp paprika
1 tsp salt, divided
¼ tsp garlic powder
¼ tsp onion powder
4 oz cream cheese, softened
¼ c grated Parmesan
2 tbsp mayonnaise
1 ½ c chopped fresh spinach
1 tsp garlic, minced
½ tsp red pepper flakes
How to make Spinach Stuffed Pork Chops
Step 1: Prepare the oven. Preheat it to 375 degrees.
Step 2: On a cutting board, place the pork chops and slice a pocket with a sharp knife into each side.
Step 3: With avocado oil, drizzle the pork chops.
Step 4: In a small bowl, place the paprika, half a tsp salt, garlic powder, and onion powder. Mix well, then evenly sprinkle this on both sides of the pork.
Step 5: In a small mixing bowl, add the cream cheese, Parmesan, mayonnaise, spinach, garlic, red pepper, and the rest of the half a tsp salt. Stir well.
Step 6: Into the pork chops, evenly spoon the spinach mixture.
Step 7: Transfer the pork chops to a 9 x 13-inch baking dish and place in the preheated oven.
Step 8: Bake for about 25 minutes, uncovered, or until the pork chop is cooked with a 145 degrees internal temperature.
Step 9: Remove from the oven and allow to rest for at least 3 minutes before serving.
