Super Easy Tex-Mex Beef Enchiladas Recipe

These impressive, easy Tex-Mex Beef Enchiladas will make you drool. Crazy delicious, super simple to throw together, and perfect for a Mexican theme dinner. Serve this with salsa, charro, or refried beans. Or if you want to experience an authentic Tex-Mex platter, serve with Spanish rice.

Ingredients

2-3 pounds coarse ground chuck
2 tablespoons cooking oil
1 medium white onion
2-3 medium jalapeno or Serrano peppers
1/3 bunch fresh cilantro
1 tablespoon chilli powder
1 tablespoon smoked paprika
1 teaspoon sea salt
1 teaspoon ground black pepper
12+ homemade corn or flour tortillas
1 cup grated Monterey jack cheese
1 cup grated Mexican blend cheese
2-3 c enchilada sauce, store-bought or RED HOT ENCHILADA SAUCE (SALLYE)

How to make Super Easy Tex-Mex Beef Enchiladas

Step 1: Prepare the oven. Preheat it to 350 degrees.

Step 2: Slice the onion into quarters after peeling them and place them in a food processor. Next, slice the peppers in half, discard the stems, seeds, and veins, then add into the food processor followed by the cilantro leaves (cut the stems). Process until the peppers, peppers, and cilantro leaves are finely minced. Leave the mixture into the food processor for now.

Step 3: In a bowl, toss the cheeses and set them aside.

Step 4: On medium-high, heat a large heavy non-stick skillet. Once hot, add the cooking oil, then ground chuck, chilli powder, paprika, salt, and pepper to the skillet. Cook until the meat is grey while stirring frequently. Add in the mixture from the food processor and continue to cook for another two minutes. Take the skillet away from the heat and set it aside.

Step 5: Ready a 9 x 13-inch baking dish. Lightly grease and set aside.

Step 6: On a paper towel, place 4 to 6 tortillas at a time and tent with another paper towel. Microwave for about 20 seconds to soften the tortillas, then transfer on a cutting board or a large piece of waxed paper.

Step 7: Down the centre of a tortilla, spoon the meat mixture, and sprinkle with a little amount of grated cheese, then roll it up and place the rolled tortilla in the prepared baking dish seam-side down. Repeat until the tortillas and meat are used.

Step 8: Over the whole dish, pour the enchilada sauce and sprinkle with the rest of the cheese. Feel free to add more cheese if desired! Bake in the preheated oven for about 25 to 30 minutes until the cheese is bubbly and crusty.

Step 9: When done, enjoy the enchiladas with salsa, charro, or refried beans. And for a Tex-Mex platter, serve with Spanish rice.
