15 Minute Garlic Lime Cashew Zoodles

I am no vegan but I enjoy healthy vegan meals like this Garlic Lime Cashew Zoodles. Time and time again, I found myself guilty of eating whatever makes me happy – greasy food, sweet dessert, etc. I think there is nothing wrong with that as long as you indulge yourself in moderation.

These zoodles are a breeze to make and a nice and easy meal option for everybody. It is so good, and the sauce is so addicting. I am pretty sure even your pickiest eaters will love this! Enjoy this as the main entree or serve as a side dish.

INGREDIENTS

2 medium zucchini
2 large carrots peeled
3/4 c. cashews
1 tbsp fresh cilantro chopped

Sauce:

2 heaping tablespoons peanut butter
1/2 tbsp hoisin sauce
1/2 tbsp sriracha sauce (or more if you like it spicy!)
1 tsp soy sauce
Juice of 1/2 lime
2 cloves garlic minced

How to make 15 Minute Garlic Lime Cashew Zoodles

Step 1: On the thinnest setting, spiralize the carrots. And on a medium setting, spiralize the zucchini. Keep aside for now.

Step 2: To a skillet, add the peanut butter, hoisin sauce, sriracha sauce, soy sauce, lime juice, and garlic. Cook over medium-high heat while stirring regularly for approximately 2 minutes until the garlic has just beginning to cook.

Step 3: To the mixture in the skillet, add the cashews, zucchini, and carrots. Gently toss using tongs or two large spoons, lifting the pan while cooking every 10 to 20 seconds until the ingredients are lightly cooked and heated. This takes about 4 to 5 minutes. Then, add in the cilantro when it is almost ready. Toss and enjoy right away.

NOTE:

I prefer home-grown zucchini as they are typically a lot larger. The ones I brought from the grocery were skinny with 6 to 8-inches in length. And remember not to overcook this dish or you’ll end up with a watery mess!
