Prepping breakfast does not have to feel like an obligation but a must to start your day with a big boost! Leaving the house with an empty stomach is the one thing I never do. And I hate the hassle of lining up just to get a cup of coffee or breakfast. The reason I love grab-and-go breakfast like these delicious Ham and Cheese Egg Muffins. Super easy to whip up with our favourite breakfast essentials (eggs, milk, cheese, and ham) and ready in just thirty minutes! Plus, these are excellent to freeze which is perfect for a quick hectic day.
For starters, who would want to start a big day without a cup of coffee or food in your stomach? I don’t. So I make sure to jump-start my day with a simple breakfast. And these muffins are one of my fave breakfasts on the run!
Ingredients
12 large Eggs
1/2 c. milk (I used skim)
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp garlic powder
3/4 c. shredded cheddar cheese divided
8 oz. ham steak cubed
2 green onions sliced thin

Step 1: Prepare the oven. Preheat it to 350 degrees. And using cooking spray, generously grease a muffin tin. I would recommend using a silicone muffin tin for this recipe if available. Set the greased muffin tin aside.
Step 2: Add the eggs, milk, and spices to a large bowl, then whisk well. Add in half a cup of shredded cheddar cheese, ham, and green onions. Stir well until all the ingredients are incorporated.
Step 3: Fill the muffin tins with the mixture and sprinkle the rest of the 1/4 cheese on each cup.
Step 4: Place in the preheated oven and bake for about 25 to 30 minutes until the eggs pull away from the sides of the muffin tin and the centre of the muffin is set.
