A fun recipe that is super easy and quick to make. Omelet in a hole is an exciting breakfast for the kids and the kids at heart. Toasted bread loaded with egg, bell pepper, cheese, and bacon filling. Say no to boring omelette or toast with this fun recipe.
INGREDIENTS
6 pieces of sandwich bread square shape
1 red bell pepper diced
1 green bell pepper diced
8 strips of bacon cut into bite-sized pieces
½ onion diced (about ¼ c.)
2 tbsp butter
6 Eggs
Salt and pepper to taste
1 c. white cheddar cheese shredded, divided
Extra butter for cooking the omelette
HOW TO MAKE OMELET IN A HOLE
Step 1: Using a knife, cut out the middle part of each slice of bread, leaving only the outline around the bread crust. Set the cut-out pieces aside for later.
Step 2: Melt the butter in a large nonstick skillet over medium-high heat. Once the butter has melted, add the peppers, onions, and bacon to the skillet and cook until the bacon is thoroughly cooked and the veggies are tender, stirring frequently. Transfer to a bowl when done and set aside.
Step 3: Discard the grease and wipe the skillet clean.
Step 4: Add the eggs to a medium bowl, season with salt and pepper, and add half a cup of cheese. Whisk to combine.
Step 5: In a nonstick skillet, add a small pat of butter. Add 1 to 2 pieces of bread at a time depending on the size of the skillet and heat over medium heat.
Step 6: Into the middle of the bread, spoon some pepper, onion, and bacon mixture. Spread the mixture around the crust.
Step 7: Into the centre, pour some of the egg mixtures until it fills the bread.
Step 8: Over the omelette mixture, sprinkle a bit of cheese.
Step 9: Back into the hole, carefully put the cut-out square, slightly pushing it down.
Step 10: Cook for about a minute or two. To keep the middle piece of bread in place, press with a spatula or your hand and flip. Continue to cook the other side for another minute or two.
Step 11: Add more butter to the skillet if needed before cooking the next batch.
TIP:
For a fun shape, use a cookie cutter to cut the bread instead of a square. Remember to make the hole large enough for the omelette filling.
