This casserole is a crowd favourite. It’s super easy to whip up using only a few simple ingredients. You can even prep this in advance, store it in the fridge, then just pop it in the oven the next day. If you need something easy, quick, and filling breakfast, then this casserole is a must! It’s filled with breakfast must-haves from eggs, potatoes, cheese, and tasty sausage. I am pretty sure you’ll go crazy over the buttery and peppery goodness of this cheesy potato breakfast casserole!
This casserole has been one of my family’s favourite holiday morning breakfasts. It’s loaded with meaty and cheesy goodness, and it also reheats beautifully!
Ingredients
1 yellow onion, chopped, sauteed in sausage grease
1 lb Italian Sausage, cooked
7 Eggs
20 oz. bag frozen Diced Hash Browns
1/2 c. milk
Salt & Pepper, to taste
8 oz. brick of Mild Cheddar Cheese, grated
How to make Cheesy Potato Breakfast Casserole
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: Using nonstick spray, grease a medium casserole dish (I used 9 x 13-inch) and set it aside.
Step 3: Cook the sausage and onions.
Step 4: Place all the ingredients in a large mixing bowl including the sausage and onions. Mix until everything is well incorporated, then pour this into the prepared casserole dish. Set aside about a cup of cheese for the topping.
Step 5: Place the casserole dish in the preheated oven and bake for about 35 minutes. Remove from the oven and top the casserole with the reserved cheese. Then, place the casserole back in the oven and resume baking for another 8 minutes.
Step 6: When done, take the casserole from the oven and let it rest for at least 15 to 20 minutes before serving. Enjoy!
