CITY CHICKEN

Do not be confused about the name of this recipe because City Chicken is not chicken! They are breaded cubes of pork threaded in skewers. These look like chicken drumsticks but pork! They are fried until just browned and baked until fork tender. Serve this city chicken with rice alongside your favourite side dishes, and do not forget to spoon the heated gravy over.

INGREDIENTS

3 tablespoons olive oil or vegetable oil
1 lb cubed pork sirloin plus skewers
1/4 c. egg beaters or two eggs are beaten with 1 tablespoon water
1/4 teaspoon smoked paprika (optional)
1/2 c. chicken stock
1/2 c. Italian seasoned dry bread crumbs
1 can or jar of gravy (pork or mushroom or one of each mixed), heated
1/4 c. all-purpose flour, seasoned with salt and pepper

HOW TO MAKE CITY CHICKEN

Step 1: Prepare the oven. Preheat it to 325 degrees F.

Step 2: Using a cooking spray, grease a glass baking dish and set it aside.

Step 3: Place the seasoned flour, eggbeaters, and breadcrumbs in three different plates/bowls. If using smoked paprika, add this to the breadcrumbs.

Step 4: Onto each skewer, thread 4 cubes of pork. Dust the pork cubes with flour, shaking the excess off. Next, dip into the eggbeaters, then coat in breadcrumbs.

Step 5: Heat a tbsp oil in a nonstick pan over medium-high heat. Once the oil is hot, cook the breaded pork on all sides until just brown.

Step 6: Transfer the pork to the prepared baking dish once they turned just brown, leaving a bit of space between the skewers. Into the bottom of the pan, pour the chicken stock. Now, tightly cover the pan with foil. Place in the preheated oven and bake the pork for about 1 1/2 to 2 hours, or until fork-tender.

Step 7: Remove from the oven when done and serve right away with the heated gravy. Enjoy!
