Ingredients

2 large eggs, whisked
4 c. cooked rice, long or short grain
1 tbsp butter
1/2 c. chopped onion
3-4 tbsp lite soy sauce
1/2 c. frozen peas
1/2 c. chopped carrots
1-2 tsp minced garlic
Optional: salt, pepper, and sesame oil, to taste

How to make Fried Rice

Step 1: Chill the cooked rice in the fridge until ready to use.

Step 2: In a large skillet or wok, melt the butter. Once the butter has melted, add the onion and carrots to the skillet/wok and cook for about 2 minutes. Then, add the garlic and peas. Stir until incorporated. Push everything to one side, then add the eggs to the skillet/wok. Scramble the egg, then mix everything.

Step 3: To the skillet/wok, gently stir in the cooked rice.

Step 4: Then, add the soy sauce and toss to coat. To taste, season with salt and pepper. If desired, add a dash or two of sesame oil.

Step 5: When done, serve the fried rice right away. Enjoy!

Notes:

1. Here are a few additions: if desired, you can add veggies to the fried rice such as mushrooms, chopped broccoli, and/or bell peppers.

2. For a complete meal, add your favourite protein like diced chicken, pork, steak, or shrimp.

3. Place the fried rice in an airtight container and store it in the fridge for up to 3 days. You can also freeze it for up to 1 month.

4. 4 cups of cooked rice is equivalent to 1 1/4 cups of uncooked rice.
