ONE PAN TOMATO BASIL CHICKEN AND RICE

This is a very satisfying one-pot meal with crispy chicken over tomato basil rice. It is the perfect easy weeknight dinner ready in under forty-five minutes!

INGREDIENTS

1 tbsp olive oil
6 chicken thighs, skin on, bone-in
1 onion, diced
2 cloves garlic, chopped
1 3/4 c. chicken broth (or chicken stock)
1 red bell pepper (capsicum), deseeded and chopped
1 1/3 c. uncooked long-grain rice, rinsed (arborio rice may also be used for a risotto-like consistency)
1/4 c. fresh basil leaves, chopped
1 tsp dried basil
1/3 c. sun-dried tomato strips in oil, chopped (optional: but adds flavour)
14.5 oz. (400 grams) tin crushed tomatoes, with liquid
extra chopped fresh basil (to serve)
1-2 tsp salt (adjust to your taste)
1/2 tsp pepper, (adjust to your taste)

HOW TO MAKE ONE PAN TOMATO BASIL CHICKEN AND RICE

Step 1: Prepare the oven. Preheat it to 200 degrees C or 400 degrees F.

Step 2: In a large, deep ovenproof cast iron skillet/pan, heat the oil. Once the oil is hot, add the chicken, skin-side down to the skillet, and sear over medium-high heat for about 3 to 4 minutes. Flip and continue to sear until golden. To a plate, transfer the chicken when done and keep warm.

Step 3: In the same skillet/pan, add the garlic and fry for about 30 seconds until aromatic. Then, add the onion and red peppers/capsicum. Cook for another 3 minutes or until the onion is transparent. Next, stir in the sun-dried tomatoes, rice, crushed tomatoes, and chicken broth/stock. To taste, season with salt, pepper, and dried basil. Bring everything to a simmer.

Step 4: Over the rice, place the chicken thighs, skin-side up. Bring to a boil and coat the chicken in the tomato sauce. Tent with foil and place in the preheated oven. Bake for about 40 minutes or until the rice is soft, has absorbed the liquid, and the chicken is completely cooked. If needed, you can stir in another 1/4 c. of water to the rice.

Step 5: Uncover and set the oven to broil/grill on medium heat for another 8 to 10 minutes or until the chicken is golden and crispy.

Step 6: To taste, season with more salt and sprinkle with some freshly chopped basil. Serve right away. Enjoy!
