I love these breakfast enchiladas. They are my favourite way to jump-start my mornings. They are also great to serve for lunch or dinner. Enjoy all your fave Text Mex flavours with breakfast staple with these amazing enchiladas!

These breakfast enchiladas are filled with savoury meat mixture and topped with rich egg custard, crisp bacon bits, and shredded cheddar. The best part about this dish is that you can make this in advance for an easy and quick meal at any time.

Fuel up your mornings with this fun and satisfying enchilada. Or wrap up your day with this and serve it alongside a simple side salad. Either way, this dish is one to keep!

Ingredients

6 eggs
1 pound sausage browned or 2 cups ham, diced
8-10 8” flour tortillas
2 cups shredded cheddar cheese
6 green onions finely sliced
1 tablespoon all-purpose flour
2 c. half-and-half or milk
6 slices of bacon cooked crisp and crumbled
1/2 teaspoon salt

How to make Breakfast Enchiladas

Step 1: Combine the meat with the green onions and 1 cup of cheese in a large bowl.

Step 2: Down the middle of each tortilla, place about 1/3 c. of the meat mixture.

Step 3: Roll the tortilla and place it into a greased 9 x 13-inch baking dish, seam-side down. Do the same with the rest of the tortillas.

Step 4: Beat the eggs, half and half, flour, and salt in a different bowl. Then, pour this over the tortillas. At this point, you can tent the dish and store it in the fridge until ready to bake.

Step 5: If baking right away, sprinkle the tortillas with the rest of the cheese, then bacon. Using foil, tent the tortillas and place them in a preheated 350 degrees. Bake the enchiladas for about 35 minutes, then uncover and continue baking for another 10 minutes or until the cheese has melted and the eggs are set.
