Beef and Broccoli Recipe

This is a wonderful one-pan meal with loads of fresh broccoli and lush steak in a delicious stir fry sauce. Enjoy this over white rice for a filling meal that your family will gladly devour!

Ingredients

Beef and Broccoli:

1 pound broccoli, (cut into 6 c. of florets)
1 pound flank steak, very thinly sliced into bite-sized strips
2 teaspoons sesame seeds, optional garnish
2 tablespoons olive oil, (or vegetable oil), divided

Stir Fry Sauce:

2 teaspoons garlic, grated (from 3 cloves)
1 teaspoon fresh ginger, grated (loosely packed)
3 tablespoons packed light brown sugar
6 tablespoons low sodium soy sauce, (or GF Tamari)
1/4 teaspoon black pepper
2 tablespoons sesame oil
1 1/2 tablespoons corn starch
1/2 c. hot water

How to make Beef and Broccoli

Step 1: Cook the rice before starting. For easier slicing, cover and freeze the steak for about 30 minutes.

Step 2: In a bowl, whisk the stir fry sauce (garlic, fresh ginger, light brown sugar, low sodium soy sauce, black pepper, sesame oil, cornstarch, and water) until well mixed and the sugar has completely dissolved. Set aside.

Step 3: Drizzle 1 tbsp oil in a large skillet over medium heat. Then, add the broccoli florets and saute for about 4 to 5 minutes, partially covered with a lid. Make sure to stir or toss a couple of times as it cooks until the broccoli is bright green and crisp-tender. Set aside when done. Note: You can add 2 tbsp water to the broccoli, then cover and steam. Do this if you prefer softer broccoli.

Step 4: Adjust the heat to high and add another 1 tbsp oil to the pan. In a single layer, add the beef and cook for about 2 minutes on each side until completely cooked. Next, add the sauce and adjust the heat to medium/low. Let everything simmer for about 3 to 4 minutes until the sauce has thickened.

Step 5: To the pan, add the broccoli and toss to combine. If desired, whisk in 1 to 2 tbsp water to thin out the sauce.

Step 6: Remove from the heat and serve the beef and broccoli immediately over white rice. Enjoy!
