Parmesan Chicken Casserole

Six ingredients and a few simple steps, are all you need to throw this Parmesan Chicken Casserole together. This delicious casserole is family-approved, always a big hit, and packed with amazing flavors. Serve this over spaghetti for an easy and quick weeknight meal. Or pair this up with just about anything.

For this recipe, I used boneless, skinless chicken breasts. I cut them into diced for quick cooking. Toss the diced chicken with the simple ingredients and bake. To make this casserole healthy, you can swap mayonnaise with plain Greek yoghurt.

Enjoy this rich, creamy, and insanely flavorful Parmesan chicken casserole over pasta, rice, even in lettuce wraps, or by itself. Or over cauliflower rice or zoodles for a healthier option.

Ingredients

1 c. mayonnaise (or Greek yoghurt)
6 boneless, skinless chicken breasts, diced
1 c. shredded Parmesan cheese
1 tsp garlic powder
1 tsp seasoning salt
1/2 tsp ground black pepper

How to make Parmesan Chicken Casserole

Step 1: Place the mayonnaise, 3/4 cup Parmesan, seasoning salt, black pepper, and garlic powder in a small bowl. Mix well until combined and set aside.

Step 2: Into a greased 9 x 13-inch baking pan, place the diced chicken and evenly spread the mayonnaise mixture on top. Then, sprinkle with the rest of the Parmesan cheese.

Step 3: Place in the preheated oven and bake for about 30 to 35 minutes. When done, remove from the oven and serve the casserole by itself or over pasta/rice. Enjoy!

Notes:

1. To serve, use a slotted spoon as the chicken will slightly be “soupy” from the liquid being released as it is cooked.

2. You can grease a cooling rack to drain the liquid as the chicken cooks or not. It all depends on your taste.
