Mac and Cheese Meatloaf Casserole

Ingredients

2 Eggs
2 pounds lean ground beef
1 c. Sweet Baby Ray’s Hickory & Brown Sugar barbecue sauce
30 Ritz Crackers
3 c. macaroni noodles
2 ounces Lipton onion soup mix
10.5 ounces condensed cheddar cheese soup
2 c. milk
1 tablespoon garlic powder
1 tablespoon onion powder
1 c. ketchup
4 c. shredded mozzarella and cheddar cheese blend
1 teaspoon salt
1 teaspoon pepper

How to Make Mac and Cheese Meatloaf Casserole

Step 1: Prepare the oven. Preheat it to 350 degrees F.

Step 2: Into a medium mixing bowl, places the ketchup and barbecue sauce. Mix well until blended and set aside.

Step 3: Into a large mixing bowl, place the ground beef.

Step 4: In a large ziplock bag, place the Ritz crackers and crush them using a rolling pin. Into the bowl with the ground beef, empty the contents of the bag. Then, add the onion soup mix and eggs along with 1/2 cup of the ketchup and barbecue sauce mixture. Mix everything using your hands until completely combined.

Step 5: Into a greased 9 x 13-inch baking dish, pours the meatloaf mixture, evenly pressing it out. On top, spread the remaining ketchup and barbecue sauce.

Step 6: Place into the preheated oven and bake for about 30 minutes.

Step 7: In the meantime, cook the noodles following the package directions. Drain the noodles when done.

Step 8: Into a large mixing bowl, pour the milk and cheddar soup. Mix well until the lumps are gone. Stir in the salt, pepper, garlic powder, and onion powder.

Step 9: To the bowl, add the cooked macaroni noodles and toss until the noodles are completely coated. Then, add 2 cups of shredded cheese and mix again.

Step 10: Remove the meatloaf from the oven when done and pour the macaroni mixture on top, evenly spreading it out. On top, sprinkle the rest of the shredded cheese.

Step 11: Place the meatloaf back in the oven and resume baking for another 17 to 20 minutes or until the cheese has melted and just beginning to brown.

Step 12: Before slicing, let the meatloaf sit for a couple of minutes. Serve and enjoy!
