My mom loves to serve this casserole on holiday mornings. She uses leftover ham pieces along with simple ingredients that we have in your pantry. This casserole is an amazing breakfast or brunch packed with hash brown potatoes, creamy potato soup, and sour cream, then topped with melty hot cheese and diced-up ham. The best part is you can easily swap ingredients. If you want to change the flavor, you can use cream of potato with cream of chicken or cream of cheddar soup instead. If you do not have any leftover ham, you can always buy diced ham or chunks of ham.
