ONE-POT BROCCOLI, CHICKEN AND RICE CASSEROLE

This creamy, cheesy one-pot broccoli, chicken, and rice casserole is the perfect dinner idea. A complete, filling meal that tastes like risotto, but is much easier and faster to make!

Ingredients

1 tbsp olive oil
500 grams (1 lb.) of chicken thigh, cut into bite-size pieces
1 onion, finely chopped
2 garlic cloves, minced
2.5 tbsp flour (or 1 ½ tablespoon cornflour/cornstarch)
1 1/4 cups (225 grams) long-grain white rice, uncooked
2 cups (500 ml) chicken broth
2 cups (200 grams) shredded mozzarella or cheddar (or use your favorite)
2 cups (500 ml) milk (any, I use low fat)
2 tbsp (30 grams) unsalted butter
1 large head of broccoli, broken/cut into small florets (400–500 grams/14 ounces – 1 lb.)
1 tsp dried thyme (or other herbs of choice)
Finely chopped parsley, optional garnish
Salt and pepper

HOW TO MAKE ONE-POT BROCCOLI, CHICKEN, AND RICE CASSEROLE

Step 1: Allow the butter to melt in a pot over high heat. Once the butter has melted, add the onion and garlic to the pot. Cook for a couple of minutes until soft and aromatic, stirring often.

Step 2: To the pot, add the chicken and sear both sides until browned.

Step 3: Adjust the heat to medium and stir in the flour. Continue to cook for a minute more until the raw taste of the flour is gone.

Step 4: Pour in half of the milk and stir well until incorporated.

Step 5: Next, add the rice, salt, pepper, and broth. Mix well. Put the lid on and let everything simmer for about 12 minutes. Then, uncover and toss in the broccoli. Replace the lid and cook for additional 3 minutes.

Step 6: Sprinkle in half of the cheese and stir well. On top, add the remaining cheese. Broil the casserole for a couple of minutes until the cheese is golden brown.

Step 7: Serve the broccoli, chicken, and rice casserole immediately. Enjoy!
