Shrimp Scampi Recipe

This Shrimp Scampi is total comfort food! Think about noodles and shrimp smothered in a buttery and garlicky sauce topped with a squeeze of lemon and fresh herbs! You can only expect perfection! Ready in just 20 minutes, this recipe is surely a must-try! Serve this with toasted garlic bread, and you have yourself a meal to remember. Enjoy!

Ingredients:

1/3 c White wine or Spaghetti water
1/2 teaspoon Grated lemon zest
1 1/2 lbs. Jumbo shrimp
16 ounces Spaghetti
2 tablespoons Olive oil
1 1/2 tablespoons Lemon juice Freshly squeezed
1/2 teaspoon Freshly ground black pepper
1 tablespoon Garlic Minced
2 tablespoons Parsley leaves Finely chopped
Salt
2 tablespoons Unsalted butter

Directions:

Place a large skillet on the stove and turn the heat to medium. Add olive oil and allow it to become hot. Add butter and allow it to melt.

Stir in the garlic into the hot skillet, then saute for a minute or just until aromatic.

Stir in the white wine, salt, pepper, and lemon zest. Let the mixture simmer for a few minutes until it reduces its volume to 1/2.

Stir in the shrimp and cook all sides for about 2 minutes or just until they turn pink. Move them to a clean plate.

Add the cooked noodles into the skillet, then toss until coated with the sauce. Dish out!

Top each serving of the noodles with shrimp, a squeeze of lemon, and freshly chopped parsley.

Serve right away. Enjoy!

Notes:

Feel free to add slurry (cornstarch and water mixture) into the sauce if you want it to become thick.

Leftovers should be kept in the fridge. Reheat them for a few minutes before serving again.
