Ingredients:
2 tbsp olive oil
2 tbsp butter
½ lb. baby potatoes – halved or quartered as needed (they should be no large than 1-inch pieces)
3 medium boneless, skinless chicken breasts
2 tsp Italian blend seasoning – OR Herbs de Provence
salt and pepper to taste
For the Dijon Cream Sauce
2 tbsp Dijon mustard
1 c heavy cream
½ tsp salt – or to taste
1 tbsp butter
¼ tsp cracked black pepper – or to taste
1 c chicken broth – I used low sodium
1 tsp minced garlic
Directions:
Prepare the oven and preheat it to 190 degrees C or 375 degrees F.
In a large mixing bowl, add the potatoes, chicken breasts, 1 tbsp of olive oil, salt, Italian seasoning blend, and pepper. Toss to coat.
Place a large skillet on the stove and turn the heat to medium. Add 1 tbsp of olive oil and butter.
When the skillet is hot, add the chicken and potatoes to individual sides. Cook each side for about 4 minutes. Move them to a clean plate.
Add butter to the same skillet and allow it to melt. Add garlic and saute for about a minute or just until aromatic.
Add the Dijon mustard and chicken broth, then stir until well blended. Add the heavy cream and whisk until well combined.
Season with salt and pepper to taste.
Put the potatoes and chicken back into the skillet, then toss to coat with the sauce.
Place skillet in the preheated oven and bake the Chicken and Potatoes with Dijon Cream Sauce for about 15 to 20 minutes or until done.
Remove from the oven, then sprinkle freshly chopped herbs and black pepper on top to garnish.
