Soft Ricotta cookies that have a wonderful flavor of orange, dark chocolate, and hazelnut. Lovely cookies, delicious, and super easy to make. They remind me of Christmas, the laughter, the blinking lights, and the jolly songs. I can’t wait for another day that I’ll make these yummy Ricotta Orange Cookies.
INGREDIENTS
2 1/2 cups flour
1 teaspoon baking powder
1 teaspoon salt
1/2 cup butter, softened
2 cup sugar
2 eggs
2 cup ricotta cheese
1/2 teaspoon vanilla
3 tablespoons orange juice
2 tablespoons orange zest
ORANGE GLAZE
1 1/2 cups powdered sugar
3 tablespoons orange juice
CHOCOLATE & HAZELNUTS
1 1/4 cups dark chocolate chips
1 cup hazelnuts, finely chopped
How to make Ricotta Orange Cookies with Dark Chocolate & Hazelnuts
Step 1: Ready the oven. Preheat it to 375 degrees.
Step 2: Use a parchment paper to line a cookie sheet.
Step 3: Combine the flour, baking powder, and salt in a medium bowl.
Step 4: Place the butter and sugar in a large bowl. Beat for about 4 minutes until light.
Step 5: Add in the eggs and beat until incorporated.
Step 6: Mix in the ricotta cheese, orange juice, and orange zest. Beat until well combined.
Step 7: Stir in the flour mixture and mix to combine.
Step 8: Place about a tablespoon of dough onto the prepared baking sheet.
Step 9: Place inside the preheated oven and bake for about 12 minutes or until the edges are golden. Remove from the oven and transfer to a wire rack to cool completely.
Step 10: To make the Orange Glaze: Stir in the powdered sugar and orange juice in a medium bowl and set aside. Spread about half a teaspoon of the orange glaze onto the cookies.
Step 11: For the Dark Chocolate and Hazelnuts: Melt the chocolate chips in a double broiler. Once melted, let the chocolate cool for a bit. Then, place the melted chocolate inside a plastic sandwich bag and snip off a small tip using a scissor. Drizzle in swirls over the cookies. Instantly sprinkle the chopped hazelnuts on top.
Step 12: Before serving, allow first the cookies to sit and the frosting to harden. Serve and enjoy! You can also layer these in cookie tins with waxed paper for later consumption.
