The more time I put in the kitchen, the more I remember, like this homemade Bisquick, that many of the old boxes of packaged food that I used to buy can be made easily from scratch. You see, Bisquick was a staple at our house for a long time. From biscuits to pancakes to fried chicken coatings – all started with that yellow package. These were the days when I paid little attention to the list of ingredients, and when I thought of cooking, the scratch meant opening the box and “just adding eggs + water.” Sadly, I’ve found then that meals from “just adding [this]” to a package probably aren’t that good, like Bisquick. When I was cleaning out the kitchen, about half of the boxes I threw away were called “health foods.”
Bisquick would also have been tossed as it contains hydrogenated oils and artificial sweeteners-both of which are on my top ingredient list to avoid. The whole point of having Bisquick at hand is convenient. One box of Bisquick can make pancakes, biscuits, and waffles, and I didn’t have to waste a great deal of time doing any of those. While I’m making most of our food now from scratch, it’s always good to have a few shortcuts now and then. It is hard work to cook every single meal from scratch, and I just want something easier that requires a few fewer steps and less brainpower so I can concentrate on other things, this is the time where Homemade Bisquick comes to the rescue.
Ingredients:
(1) cup all-purpose flour
1 ½ tsp baking powder
¼ tsp salt
1 tbsp butter
Directions:
In a bowl, sift flour. Add the baking powder and salt and whisk until fully incorporated. Cut butter into flour mixture using a pastry cutter until evenly combined.
Note:
If necessary, shortening or oil can be used in place of butter. By using melted butter, ensure that the butter is spread as widely as possible.
