If you are looking for an easy lunch or dinner recipe, then this is for you. This Mushroom Grilled Cheese is one of the easiest and quickest you can make. A no-fuss, pretty straightforward sandwich recipe. A gooey, satisfying, delicious grilled sandwich for a happy tummy. My daughter’s favorite packed lunch for school. I serve this along with some grapes or sliced apples and juice to complete her meal.
INGREDIENTS
1 tablespoon butter
1 tablespoon olive oil
1 small onion, sliced
8 ounces cremini mushrooms, sliced
2 cloves garlic, chopped
1 teaspoon thyme, chopped
1/4 cup white wine or broth
salt and pepper to taste
1 tablespoon parsley, chopped
1/2 teaspoon truffle oil (optional)
1 cup fontina or gruyere, shredded
1/4 cup Parmigiano Reggiano, grated
4 slices bread
2 tablespoon butter
How to make Mushroom Grilled Cheese
Step 1: Place the butter in a pan and melt over medium heat.
Step 2: Saute the onion for about 5 to 7 minutes until tender.
Step 3: Add in the garlic and thyme and continue cooking for another minute until fragrant.
Step 4: Add and saute the cremini mushrooms. Cook for 10 to 15 minutes more until it begins to caramelize and the mushrooms turn golden brown.
Step 5: Pour in the white wine and deglaze the pan. Continue to cook for 2 to 3 minutes until the liquid has evaporated.
Step 6: Now, season with salt and pepper to taste. And add in the parsley.
Step 7: Remove the pan from the heat and let it cool a little.
Step 8: When the mushrooms are a bit cooled, stir in the cheese.
Step 9: Put some butter on each side of the bread. Put 2 pieces of bread side down in the pan.
Step 10: Top each bread with half of the mushroom mixture and cover with the rest of the bread side up.
Step 11: Grill for about 2 to 4 minutes each side until the cheese is melted and the bread is golden brown.
