This is a completely versatile dish, you can substitute the ingredients with anything you fancy. Like bacon for ham or sausage and so on. Super tasty and an easy and quick breakfast must-have and to keep. Have a hearty, filling breakfast or brunch and enjoy the rest of your day!
Ingredients
1 pound sliced bacon, diced
1 medium sweet onion, chopped
6 large eggs, lightly beaten
4 cups frozen shredded hash brown potatoes, thawed
2 cups shredded cheddar cheese
1-1/2 cups Daisy 4% cottage cheese
1-1/4 cups shredded Swiss cheese
How to make Amish Breakfast Casserole
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: Cook the bacon and onion in a large skillet over medium heat until crisp. Drain excess grease.
Step 3: Combine the rest of the ingredients in a large bowl. Add in and stir the bacon and onion mixture.
Step 4: Pour this into a greased 13 x 9-inch baking dish.
Step 5: Place inside the preheated oven and bake for about 35 to 40 minutes, uncovered, until a knife inserted in the middle of the casserole comes out clean.
Step 6: Remove from the oven and allow to cool for at least 10 minutes before cutting.
Step 7: Serve and enjoy!
Tips:
1. Add a pinch of minced herbs into the egg mixture for that burst of colour and fresh flavour. Try thyme and parsley; a tsp fresh or 1/4 tsp dried.
2. Cottage cheese is a great addition, it’s cleverly versatile and dissolves into the dish when baked.
3. Make this a day ahead, prepare everything, and pop in the oven when ready to serve.
