Fluffy pancakes that taste excellent! I love these with some crushed nuts, chocolate syrup, or whipped topping. But you can eat them as is or with butter and simple syrup. Ingredients
1 cup pumpkin pie filling
2 large eggs
2 cups of milk
2 cups all-purpose flour
4 teaspoons baking powder
1 tablespoon white sugar
1 teaspoon pumpkin pie spice
1 teaspoon ground cinnamon
1 pinch ground nutmeg
HOW TO MAKE EASY PUMPKIN PANCAKES
Step 1: Combine the eggs and pumpkin pie filling into a medium mixing bowl until well mixed. Add and stir the flour, baking powder, milk, pumpkin pie, sugar, nutmeg, and cinnamon until smooth.
Step 2: Heat oil in a griddle over medium-high heat.
Step 3: Once the oil is hot, add spoonfuls of batter and cook for about 3 to 4 minutes or until the sides are dry.
Step 4: Turn over and continue to cook the other side for 2 to 3 minutes more or until brown. Do this for the remaining ingredients.
Step 5: Once cooked, transfer the pancakes to a clean serving plate and serve. Enjoy!
