Crispy with so much flavour outside and tender and fluffy inside. Easy Breakfast Potatoes are my favourite, my go-to side dish for almost anything! My family cannot get over these delicious potatoes. I make sure to always double the recipe because they prefer it over anything else! The most requested breakfast side. Super easy to throw together and is ready in no time. Surely a keeper!
INGREDIENTS
2 lbs russet potatoes
3 tbsp olive oil
1 tsp kosher salt
¼ tsp black pepper
1/2 tsp garlic powder
1/2 tsp paprika
½ tsp onion powder
1 tbsp fresh minced parsley
HOW TO MAKE EASY BREAKFAST POTATOES
Step 1: Prepare the oven. Preheat it to 400 degrees F.
Step 2: Use a silicone mat or foil to line a large baking sheet.
Step 3: Peel and dice the potatoes into half-inch cubes.
Step 4: Transfer the diced potatoes into a large bowl and drizzle with olive oil. Toss to coat. Sprinkle the potatoes with seasonings and toss to evenly coat.
Step 5: In an even layer, spread the potatoes on the prepared baking sheet.
Step 6: Place inside the preheated oven. Bake for about 20 to 23 minutes.
Step 7: Quickly stir the potatoes. Adjust the oven to broil.
Step 8: Broil the potatoes for about 4 to 5 minutes or until crispy and golden brown.
Step 9: Garnish with fresh minced parsley and serve quickly.
