A simple cake with chunks of fresh sweet apples and nuts. A delicious, tender cake that is heaven in every bite. I always love the tart and sweet flavour of this cake, plus its refreshing taste. And it is a breeze to prepare, not fussy, nor you need any difficult to pronounce ingredients.

The secret is choosing the right variety of apples to use. Baking apples are great as they hold their shape when baking and does not turn into applesauce. Granny Smith, Honey Crisp, Pink Lady, Braeburn, and Jonagold are excellent varieties. But you can use any combination depending on your taste. If you love apples, then, this is a real treat. Give this a try and you can thank me later.

1 c of vegetable oil
1-3/4 c sugar
3 Eggs
2 c flour
1 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
1 tsp vanilla
4 large apples, chopped
1/2 c nuts, chopped

Step 1: Combine the eggs, sugar, and oil in a small mixing bowl until well mixed.

Step 2: Sift the flour, soda, salt, and cinnamon in a different mixing bowl. Stir until incorporated.

Step 3: Add the flour mixture into the egg mixture and beat until well mixed.

Step 4: Fold in the apples and nuts. And stir in the vanilla until well combined.

Step 5: Grease a 9 x 13-inch pan with cooking spray and sprinkle with flour.

Step 6: Shift the batter into the prepared pan and evenly spread on the bottom.

Step 7: Bake in the oven for about an hour at 175 degrees C or 350 degrees F.

Step 8: Once done, remove the cake from the oven and onto a wire rack. Allow the cake to cool at room temperature.
