This is a simple, moist cake with tart apples and a sweet powdered sugar glaze. It is a very decadent dessert perfect for any occasion.
INGREDIENTS
CINNAMON SUGAR:
2 tsp ground cinnamon
⅓ c. packed light brown sugar
CAKE:
2 large eggs
¾ c. granulated sugar
2 tsp vanilla extract
1 ½ c. all-purpose flour
½ c. buttermilk
1 tsp baking soda
1 tsp baking powder
¼ tsp salt
½ c. unsalted butter, at room temperature
APPLES:
1 ¾ c. chopped peeled baking apples
1 ½ tsp ground cinnamon
3 tbsp granulated sugar
ICING:
2 tsp cream or milk
½ c. powdered sugar
HOW TO MAKE APPLE FRITTER CAKE
Step 1: Prepare the oven. Preheat it to 350 degrees F.
Step 2: Using a nonstick baking spray, grease a 9 x 5-inch loaf pan and set it aside.
Step 3: In a small bowl, mix the brown sugar and cinnamon until well combined and set aside.
Step 4: To make the cake, cream the sugar and butter in a large bowl using an electric mixer on medium speed until light and fluffy. Stir in the vanilla and add the eggs, a piece at a time, beating every after each addition until well blended. Make sure to scrape down the sides and bottom of the bowl as you go.
Step 5: Whisk the flour, baking powder, baking soda, and salt in a medium bowl. Then, add this to the dry ingredients alternately with the buttermilk, beating on medium speed until just combined. Using a spatula, scrape down the sides and bottom of the bowl.
Step 6: Mix the sugar and cinnamon in a medium bowl until combined. Add the apples and toss until coated.
Step 7: To the prepared loaf pan, add half of the batter, then layer half of the apples on top, pushing them gently into the batter. Over the apples, sprinkle half of the cinnamon sugar. Repeat with the rest of the batter, apples, and cinnamon sugar. Swirl all the ingredients using a skewer.
Step 8: Place in the preheated oven and bake for about 60 to 65 minutes or until a toothpick inserted in the middle of the cake comes out clean.
Step 9: In a small bowl, whisk the powdered sugar and cream until smooth.
Step 10: On a serving platter, transfer the cake and drizzle with the icing while still warm. Slice and serve the cake either warm or at room temperature. Tightly wrapped any leftovers in plastic wrap and store them in the fridge.
