Take a break from the usual fries and try this recipe instead! These Greek Lemon Potatoes are coated with incredible flavors that you and your loved ones are going to enjoy! You don’t need to worry about leftovers because I’m sure there won’t be any! The amazing flavor of the lemon-garlic in each bite is very addicting! Try not to eat them all in one sitting!
Ingredients:
1/2 c Olive oil
1/3 c Lemon juice
1 tablespoon Dried oregano
5 Garlic cloves, finely grated
1 1/2 c Chicken stock/broth
2 teaspoons Salt
2.5 pounds Potatoes
Garnish
Fresh oregano leaves
Lemon wedges
Directions:
Prepare the oven and preheat it to 200 degrees C or 400 degrees F.
Slice into 4 cuts the large peeled potatoes and thirds the medium ones.
Add the potato slices into a heat-proof pan together with lemon juice, oregano, olive oil, chicken stock, salt, and garlic. Toss everything until well incorporated.
Place the pan in the preheated oven and roast the potatoes for about 45 minutes.
Flip the potatoes over and roast for another 30 minutes or until done.
Optional Step:
Move the potatoes onto a baking tray and drizzle them with the accumulated oil from the other pan.
Place the tray in the oven and roast the potatoes again for 35 minutes or until they turn a bit crispy on the sides. Make sure to flip them over halfway through the roasting time.
Roast the other ingredients in the pan for 5 minutes or until the garlic turns golden brown.
Serve the potatoes with the garlic mixture on top. Enjoy!
Notes:
Serve these Green Lemon Potatoes with lemon wedges and garnish with freshly chopped oregano leaves.
