Fresh, delicious, and easy to make avocado chicken soup with lime. I am not usually a fan of avocados, but this changed all that! Lime and avocado go super well together! And with chicken, this soup is filling and extremely satisfying.
4 (6 inches) corn tortillas, julienned
1 ½ tablespoon olive oil
1 white onion, sliced thinly
8 cloves garlic, thinly sliced
4 peppers fresh jalapeno peppers, sliced
8 ounces skinless, boneless chicken breast halves – cut into thin strips
1-quart chicken broth
¼ cup fresh lime juice
1 tomato, seeded and diced
salt and ground black pepper to taste
1 avocado – peeled, pitted, and diced
¼ cup chopped fresh cilantro
HOW TO MAKE AVOCADO SOUP WITH CHICKEN AND LIME
Step 1: Ready the oven. Preheat it to 200 degrees C or 400 degrees F.
Step 2: On the prepared baking sheet, add the tortilla chips. Bake in the preheated oven for about 3 to 5 minutes or until light brown.
Step 3: Heat oil in a large bowl over medium heat until hot. Saute the jalapeno and onion and cook for about 5 minutes or until the onion is translucent.
Step 4: Add and stir in the chicken, lime juice, tomato, chicken broth, salt, and pepper until incorporated. Allow to simmer for approximately 10 minutes or until the chicken is cooked through.
Step 5: Add in the avocado and cilantro. Continue to cook for another 3 minutes. If needed, season with salt and pepper.
Step 6: When ready to serve, ladle into serving bowls and top with tortilla chips. Enjoy!
