1 ½ tsp onion powder
½ tsp salt
1 tsp pepper freshly ground

8 strips bacon thick ⅛” strips are best, regular ones can be used too
¼ c. brown sugar (adjust quantity as per your taste preference)
How to make Bacon Wrapped Chicken
Step 1: Combine the rub ingredients (brown sugar, smoked paprika, cayenne pepper, garlic powder (or granules), onion powder, freshly ground pepper, and salt) in a small bowl.
Step 2: On both sides of the chicken breasts, sprinkle half of the brown sugar spice mix. Evenly rub on all sides.
Step 3: Around the chicken breasts, gently wrap the bacon as tight as you can without tearing it. Use about 2 to 3 bacon depending on the size and length of the chicken breast to completely wrap it. And in a baking dish, arrange the wrapped chicken breast and evenly sprinkle with the rest of the brown sugar spice mix.
Step 4: In a preheated 375 degrees F or 185 degrees C oven, bake the bacon-wrapped chicken breasts for about 25 to 30 minutes. Spoon the drippings from the pan over the chicken for juicy chicken and extra flavour every 10 minutes. Check the internal temperature of the chicken breast using a meat thermometer. Once it reached 165 degrees F, the chicken is cooked through. Or slice the breasts in the centre and if the meat is all the way white, the chicken is perfect!
Step 5: This is optional but if you want to make the bacon crispy, broil for about 2 minutes once the chicken is cooked through.
Step 6: Before serving, garnish with some fresh chopped parsley. Enjoy hot with the pan drippings and serve over a bed of mashed potatoes or your favourite roasted veggies.
For this recipe, you can use chicken breasts or chicken thighs for juicier meat, or chicken tenders, even bone-in chicken wings.
For the bacon, use about 1/8-inch thick strips of streaky/fatty bacon.
The number of bacon to use will vary depending on the size of the chicken breasts.
In place of brown sugar, you can use either maple syrup or honey.
For even cooking, neater look, and extra flavours, regularly baste the bacon-wrapped chicken with pan drippings.
Slightly reduce the oven temperature of the bacon starts to smoke at 375 degrees F.
Broiling the bacon-wrapped chicken is optional but if you want golden crispy bacon, broil under the broiler for a minute or two.
