Today we decided to make Banana Bread Bars with Brown Butter Frosting. My nephew helped and she was very happy, excited even because it is her favorite. This is like our classic banana bread recipe that turned into bars with a sweet brown butter frosting that I personally enjoy. It’s moist and super delicious. You can top them with some sliced nuts for presentation and extra crunch.
To make the Bars:
1 ½ cups of white sugar
1 cup sour cream
½ cup of butter softened
1 ¾ cups of mashed ripe bananas
2 teaspoons vanilla extract
2 cups of all-purpose flour
1 teaspoon baking soda
¾ teaspoon salt
½ cup chopped walnuts (optional)
For the Frosting:
½ cup butter
4 cups of confectioners’ sugar
3 tablespoons milk
1 ½ teaspoons vanilla extract
How to make Banana Bread Bars with Brown Butter Frosting
Step 1: Prepare the oven by preheating it to 350 degrees F or 175 degrees C. Grease and flour a 15 x 10-inch jelly roll pan.
Step 2: In a bowl, place the white sugar, sour cream, half cup softened butter and eggs. Use an electric mixer to beat until creamy. Mix in the bananas and 2 teaspoons of vanilla extract. Then, add the flour, baking soda, and salt. Continue mixing for one minute before adding the walnuts and beat the batter until well combined.
Step 3: Pour the batter into the prepared pan and spread evenly.
Step 4: Place inside the preheated oven and bake for about 27 minutes until golden. Remove from the oven and let it cool.
Step 5: In a large saucepan, melt half of the butter over medium heat for about 3-5 minutes. Once bubbling and golden brown, remove from the heat.
Step 6: To make the frosting, whisk the confectioners’ sugar, milk, and vanilla extract into melted butter. Mix until a smooth frosting consistency is reached.
Step 7: Generously spread the frosting over the cooled banana bars. Serve and enjoy!
