Broccoli Chaddar Soup

Ingredients:

1 Garlic clove
1 Small head of broccoli
2 ounces of Full-fat cream cheese
1/3 c Heavy cream
1 & ¼ c Shredded cheddar cheese
2 c Chicken broth
1 Small onion
4 tablespoons Salted butter

Directions:

Mince the garlic cloves, then slice the broccoli and onion into small cuts.

Place a pot on the stove and turn the heat to medium. Add butter and allow it to become hot.

Add the minced garlic and onions, then saute for a few minutes until aromatic and soft.

Add the broccoli slices and chicken broth. Stir everything until well combined.

Adjust the heat to high and cook the broccoli until soft. Stir in the heavy cream and cream cheese until well blended. Allow the soup to boil.

Stir in the cheddar cheese and stir until melted completely.

Reduce the heat to low, then simmer the soup for a few minutes until the texture becomes thick. Taste, then add more seasonings if needed. Dish out!

Serve right away. Enjoy!

Notes:

Place any leftovers in an airtight container, then put them in the fridge. Reheat for a few minutes before serving again.

You can easily cook this soup in your Instant Pot.

Press the “Soup” button and put all the ingredients in it. Close and seal, then cook the soup for about 20 to 40 minutes or until done.

This soup will take about 3 to 4 hours in the crockpot over high heat.
