Ingredients:
2 1/4 c Panko crumbs, divided
1 Egg, lightly beaten
1/2 c all-purpose flour
1 1/2 heaping c fresh broccoli florets
1/2 tsp crushed red pepper flakes
Vegetable or Canola oil
1 c shredded Colby cheese
2 Eggs, lightly beaten
1 c shredded cheddar cheese
4 oz. Velveeta, cut into small chunks
Directions:
Prepare the broccoli florets and steam them. Allow them to cool completely and chop them finely. Put them into a large mixing bowl.
In the bowl with the chopped broccoli, add egg, 1/4 cup Panko bread crumbs, red pepper flakes, and cheese. Stir everything until well incorporated.
Make 12 to 14 small balls out of the mixture, then put them onto a clean plate. Place it in the fridge and let the balls, chill for half an hour.
Add flour into a bowl, beat eggs into another, and Panko breadcrumbs into the last bowl.
Place a Dutch oven on the stove and turn the heat to medium-high. Add 2 inches of oil and allow it to become hot.
Coat each broccoli ball with flour, egg, and crumbs. Shake off any excess.
Add 4 coated broccoli balls into the hot oil, then cook all sides for a few minutes until golden brown. Move them to a clean plate lined with paper towels to drain excess oil. Repeat the process with the rest of the broccoli balls.
Serve and enjoy!
Notes:
You can add crumbled bacon to the broccoli mixture if you prefer. Bacon gives a nice texture and flavor to them!
