These Butter Pecan Slice and Bake Cookies are such appetizing treats! Made from scratch with simple ingredients, they will surely make your day extra special! Serve them with your favorite cup of coffee, and you have yourself a snack to remember. Enjoy!
Ingredients:
1 and 1/2 c all-purpose flour
1/2 tsp ground cinnamon
1 c pecans, shelled
1 large Egg, at room temperature
1/2 c light brown sugar, packed
4 oz. unsalted butter, softened to room temperature
8 oz. quality chocolate, chopped
1 tsp vanilla, optional
Directions:
In a small mixing bowl, add the pecans and enough water to submerge them. Let the pecans soak for about half an hour.
Drain and transfer them onto paper towels to dry up.
Add brown sugar and butter into the bowl of a stand mixer. Beat for a few minutes on a medium-high speed until well blended and smooth.
Add the egg, then beat until well incorporated.
Add the vanilla, flour, pecans, and cinnamon. Beat again until well combined.
Dust off about 2 tbsp of flour onto a flat surface, then place the dough on it. Knead for about 30 seconds and cut it into two.
Roll each dough to about 2 inches and wrap them with plastic. Place them in the fridge to chill for about 2 hours.
Prepare the oven and preheat it to 175 degrees C or 350 degrees F.
Line the inside of a baking sheet with parchment paper.
Place the dough onto the flat surface, then slice it into 1/4-inch circles. Arrange them in a single layer on the prepared baking sheet.
Place the baking sheet in the preheated oven and bake the cookies for about 10 minutes or until they turn golden brown.
Remove the cookies from the oven and allow them to cool for about 15 minutes at room temperature.
Melt the chocolate and stir it until smooth.
Coat each cookie with the melted chocolate, then top them with sea salt and chopped pecans.
