When I become a mom I figured that casseroles are a mother’s best friend. Seriously, they are the perfect menu. Everything in one dish! How convenient is that? Casseroles are super versatile, you can mix and match the ingredients plus they are way easy to prepare. I have a lot of casserole recipes in my pocket and one of my favorites is this Cheesy Amish Breakfast Casserole. It has all the breakfast essentials from bacon, hash brown potatoes, eggs, and cheeses. No need to cook them separately just to complete the breakfast band. They are all in one casserole. Certainly, a sure-fire breakfast menu that is super delicious, and your family will love. Enjoy a hearty breakfast casserole that is mouthwatering, satisfying, and comforting.
INGREDIENTS
1 pound sliced bacon, diced
1 sweet onion, chopped
4 cups frozen shredded hash brown potatoes, thawed
9 eggs, lightly beaten
2 cups shredded Cheddar cheese
1 1/2 cups small curd cottage cheese
1 1/4 cups shredded Swiss cheese
How to make Cheesy Amish Breakfast Casserole
Step 1: Prepare the oven. Preheat it to 350 degrees F or 175 degrees C.
Step 2: And grease a 9 x 13-inch baking dish.
Step 3: In a large skillet, cook and stir the bacon and onion for 10 minutes over medium-high heat or until the bacon is evenly browned. Once done, drain and transfer into a large bowl.
Step 4: Mix in the potatoes, eggs, cheddar cheese, cottage cheese, and Swiss cheese.
Step 5: Pour the mixture in the greased baking dish and place it inside the preheated oven. bake for about 45 to 50 minutes or until the eggs are set and the cheese is melted.
Step 6: Once done, remove from the oven and let it rest for 10 minutes before cutting. Enjoy!
