Whether you are having guests over or just a simple family dinner, this Chicken Alfredo Lasagna is perfect for such occasions! Enjoy the different layers of delicious flavors in this lasagna! It is ready for serving in less than an hour!
Ingredients:
The sauce:
1 1/2 c grated Parmesan
15 oz. of Ricotta cheese
10 oz. fresh baby spinach
4 c Heavy cream
1 c onion, chopped
2 Garlic cloves, minced
1 1/2 tsp salt
1/4 tsp black pepper
2 tbsp unsalted butter
Chicken and cheese filling
3 c shredded Mozzarella cheese
3 c shredded rotisserie chicken
15 Cooked lasagna noodles
Directions:
Place a large skillet on the stove and turn the heat to medium-high. Add 2 tbsp of butter and allow it to melt.
Add 1 cup of chopped onions and minced garlic, then saute for a few minutes until soft and aromatic.
Add the spinach, then cook for a few minutes until wilted.
Stir in 1 1/2 cups of grated Parmesan cheese, salt, pepper, 3 cups of shredded chicken, 4 cups of heavy cream, and 15 oz. Ricotta cheese. Stir everything until well incorporated. Let it simmer and remove it from the stove.
Add some of the chicken Alfredo into a 9×13-inch deep baking and spread it evenly to the bottom.
Lay the lasagna sheets on top of the sauce, followed by the chicken Alfredo and 1/3 of the cheese. Repeat the process until everything is arranged in layers ending with cheese.
Cover the baking dish with aluminum foil, then place it in the oven at over 350 degrees F and bake for about 35 minutes.
Remove the foil cover and broil for another 3 minutes or until the cheese turns golden brown.
Remove from the oven.
Serve and enjoy!
Notes:
Keep leftovers in an airtight container, then in the fridge. Reheat for a few minutes before serving again.
This lasagna can last up to 3 months in the freezer.
