Ingredients:
CHICKEN
4 tablespoons / 60 grams of unsalted butter
1 teaspoon salt (cooking / kosher salt)
1/2 teaspoon black pepper
4 chicken thighs, skin-on and bone-in (~250 grams/8 ounces each)
4 chicken drumsticks (~150 grams/5 ounces each)
STEW INGREDIENTS
3 thyme sprigs (or 1/2 teaspoon dried thyme)
3 tablespoons flour, plain/all-purpose
300 grams / 10 ounces white mushrooms, halved if small, or cut in 4 to 6 if large
1/4 teaspoon black pepper
2 tablespoons parsley, chopped
2 medium brown onions, sliced 0.6cm (1/2-inch) wide
3 c chicken stock, low sodium (preferably homemade!)
2/3 c thickened/heavy cream
1 bay leaf, fresh (sub-dried)
1/2 c white wine, preferably Chardonnay
1/4 teaspoon salt (cooking / kosher salt)
2 garlic cloves, finely minced
Directions:
Use paper towels to pat dry the chicken pieces, then season them with salt and pepper.
Place a large skillet on the stove and turn the heat to medium-high. Add butter and allow it to melt.
Add the chicken pieces into the hot skillet, then sear each side for about 4 minutes or until they turn brown. Move them to a clean plate.
In the same skillet, add the onions, bay leaf, thyme, and mushrooms. Saute for about 5 minutes or until soft and golden brown.
Stir in the garlic, then saute for about a minute or just until aromatic. Whisk in the flour and cook for another minute to remove the raw taste.
Stir in the chicken stock and wine, then deglaze the skillet by scraping the bottom. Simmer to remove the alcohol from the wine.
Put the chicken pieces back into the skillet, then toss to coat with the delicious sauce.
Turn the heat to medium-low, then cover the skillet and simmer everything for about 10 minutes. Uncover and cook for 20 more minutes.
Stir in the cream until well blended. Taste, then add more seasonings if needed. Dish out!
Sprinkle freshly chopped parsley on top to garnish.
Serve right away over mashed potatoes. Enjoy!
