This delicious Chicken with Garlic Parmesan Rice is a complete meal cooked in a single pan. The perfect easy and quick weeknight meal on busy days that I am pretty sure your entire family will love. Say no to take out and make this dish tonight for a satisfying, easy dinner made in one skillet!
1 pound chicken tenders
Salt and pepper
1/2 tsp garlic powder
2 tbsp olive oil
1/2 c. butter (1 stick)
2 tbsp minced garlic
1/4 tsp red pepper flakes
1 tsp salt divided
1/2 c. dry white wine (such as Pinot Grigio)
1 1/2 c. white rice (uncooked)
3 c. chicken broth
1/2 c. Parmesan cheese (grated or shredded)
How to make Chicken with Garlic Parmesan Rice
Step 1: In a large skillet, heat the olive oil over medium heat. In the meantime, sprinkle the chicken with salt, pepper, and garlic powder. Once the oil is hot, add the chicken to the skillet and saute until just cooked through and brown. Set the cooked chicken aside when done.
Step 2: In the now-empty skillet, saute the butter, garlic, pepper flakes, and half tsp salt for a few minutes over medium heat. Adjust the heat to medium-high, then pour in the white wine. Cook for about 5 minutes while stirring regularly. Reserve about 3 tbsp of the pan sauce for later.
Step 3: In the remaining butter sauce in the skillet, add the uncooked rice. Stir well until the rice is completely coated with the sauce. Pour in the chicken broth and season with the rest of the half tsp salt. Once the mixture is boiling low, adjust the heat to medium-low, and cover the skillet. Let the mixture simmer for about 20 minutes until the rice is tender, stirring a few times.
Step 4: Over the rice, sprinkle the Parmesan and return the chicken tenders to the skillet. Cover the pan again, take away from the heat, and let it sit for at least 5 minutes.
Step 5: On the chicken, drizzle the reserved pan sauce. Serve the Chicken and Garlic Parmesan Rice garnished with parsley. Enjoy!
