CHOCOLATE PEANUT BUTTER CRAZY CAKE

This is cake is incredibly moist with a creamy peanut butter frosting. A real treat for everyone and the perfect cake for all occasions!

Ingredients

CAKE:

1 c. sugar
1 1/2 c. flour (all-purpose)
1 tsp baking soda
3 tbsp cocoa (unsweetened)
1 tsp white vinegar or apple cider vinegar
5 tbsp vegetable oil
1 tsp pure vanilla extract
1 c. water
1/2 tsp salt

PEANUT BUTTER FROSTING:

1 c. creamy peanut butter, at room temperature
1/2 c. butter, softened to room temperature (be sure to use real butter, not margarine)
3 tbsp milk, at room temperature
2 c. confectioners’ sugar
1 tsp vanilla extract (optional)

HOW TO MAKE CHOCOLATE PEANUT BUTTER CRAZY CAKE

CAKE:

Step 1: Prepare the oven. Preheat it to 350 degrees F.

Step 2: In a greased 8-inch square baking pan, combine the flour, cocoa, sugar, baking soda, and salt until well mixed. Create two small and one larger depression in the dry ingredients. In one depression, pour the vinegar. Then, the vanilla on the other, and in the last depression, pour the vegetable oil. Next, pour water on everything and mix well until smooth.

Step 3: Place in the middle rack of the preheated oven and bake for about 35 minutes or until a toothpick inserted in the center of the cake comes out clean. Take the cake out of the oven when done and let it cool.

PEANUT BUTTER FROSTING:

Step 4: In a medium to large size bowl, place the butter and peanut butter. Using an electric mixer, beat the butter and peanut butter until smooth and creamy. Then, add 2 c of confectioners’ sugar. Beat until well incorporated and the mixture starts to thicken. Add the vanilla (if using) along with 1 tbsp milk at a time (total of 3 tbsp). Mix for about 3 minutes or until the frosting is fluffy, lighter, and spreadable. You can add a bit more milk if the frosting is too thick.

Step 5: Frost the cooled cake.

NOTES:

1. For this recipe, you can skip the peanut butter frosting if desired and simply use your preferred frosting. You can also just dust the cake with powdered sugar if desired.

2. Before starting the peanut butter frosting, make sure all the ingredients are at room temperature.
