Serve this packed with flavour Cowboy Quiche either for breakfast, lunch, or dinner. A crazy delicious deep dish with a deal of smoky bacon, sweet caramelized onions, and savoury cheddar cheese. Always a huge hit and super easy to throw together. And this fantastic quiche is perfect if you are planning to feed the crowd.
INGREDIENTS
1 unbaked pie crust
2 medium yellow onions, sliced
2 tbsp salted butter
8 slices bacon, chopped
8 large Eggs
1 1/2 c. heavy cream or half-and-half
3/4 tsp salt
1/4 tsp black pepper
2 c. grated cheddar cheese
HOW TO MAKE COWBOY QUICHE
Step 1: Prepare the oven. Preheat it to 400 degrees F.
Step 2: Line a deep-dish pie plate with unrolled pie crust. Crimp the edges and chill in the fridge until ready to use.
Step 3: In a large skillet, melt the butter over medium-low heat. Add the onions to the melted butter and cook for approximately 20 minutes while stirring every 5 minutes or so until the onions caramelized and are golden brown. To a bowl, transfer the onions and set them aside.
Step 4: Adjust the heat to medium-high, then place the chopped bacon in the same skillet. Cook the bacon and transfer when done to the bowl with the onions.
Step 5: Place the eggs, cream, salt, and pepper in a large bowl. Whisk until well combined. Then, add in the caramelized onions, cooked bacon, and grated cheese. Into the prepared pie crust, pour the mixture.
Step 6: Place in the preheated oven and bake for about 45 minutes while loosely covered with foil. Uncover and bake for an additional 15 minutes until the quiche is mostly set and the crust is golden brown. Remove from the oven when done and allow the quiche to cool for at least 15 minutes. Then, slice and serve warm or cool.
NOTES:
1. To make this quiche, make sure to use a deep-dish pie plate. Or make two if using a store-bought crust in a shallower pie dish and simply freeze the other one for later.
2. Feel free to make this quiche three days ahead. Just keep it in the fridge. You can also bake the quiche and freeze it for up to 3 to 4 months. When ready to serve, thaw on the fridge overnight and let it come to room temperature at least an hour before serving. Alternately, you can warm the quiche in the oven.
