I love pastries, sweets, and treats. During my free time, I enjoy baking. I recently bought a new oven (I gave my old one to my sister) and I have been baking nonstop! This cream cheese cranberry bread recipe is one of my favourites. It’s super easy to make using just a few simple ingredients. The tart cranberries compliments well the sweet cream cheese bread. Not only that this bread tastes great, but it looks very appetizing! I always enjoy a big slice of this cream cheese cranberry bread in the afternoon with a huge mug of my favourite coffee.
I found this recipe last year. I even shared this with a lot of my friends. Last Christmas, I’ve baked a few of these and gifted them to colleagues and friends. I received nothing but compliments. If you are a big fan of cranberries (or even if you are not), I am sure that you’ll enjoy every bit of this delicious bread!
1 cup butter softened
1 1/2 teaspoons vanilla
2 cups all-purpose flour
8 ounces package cream cheese, softened
1 1/2 teaspoons baking powder
2 cups cranberries fresh or frozen
1/2 cup chopped pecans optional
1 1/2 cups sugar
1/2 teaspoon salt
How to make Cream Cheese Cranberry Bread
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: Cream the butter, cream cheese, sugar, and vanilla in a large mixing bowl. Then, add the eggs a piece at a time, beating every after each addition.
Step 3: Place the flour, baking powder, and salt in a different bowl. Mix well until combined, then gradually mix into the wet batter until blended. Lastly, fold in the nuts and cranberries.
Step 4: Into two greased 9 x 5-inch loaf pans pour the batter. Place in the preheated oven and bake for about 45 to 60 minutes. For this recipe, you can use four mini loaf pans and bake for about 40 minutes.
