This Creamy Chicken Mushroom is loaded with amazing flavors that you and your loved ones are going to like! I like serving this with mashed potatoes or cooked rice. The combination of all the flavors in this dish is so good that you would crave it pretty much all the time!
Ingredients:
1 1/4 c chicken broth
1/2 teaspoon cornstarch
4 oz. Light cream cheese, softened
8 oz. button mushrooms, halved
3 garlic cloves, crushed
1/2 teaspoon salt
1.5 lbs. chicken breasts, boneless, skinless
1 tablespoon fresh chopped curly parsley
1/4 teaspoon pepper
2 tbsp olive oil, divided
Directions:
Place a large pan on the stove and turn the heat to medium-high. Add 1 tbsp of olive oil and allow it to become hot.
Add the chicken breasts into the hot skillet, then cook each side for about 5 minutes or until they turn golden brown. Move them to a clean plate.
In the same pan, add 1 tbsp of oil and allow it to become hot. Stir in the mushrooms and saute for a few minutes until soft.
Stir in the garlic and saute for about a minute or just until aromatic.
Add the broth and slurry (cornstarch and water mixture), then stir until well blended. Make sure to deglaze the pan by scraping the bottom to get the browned bits. Sprinkle salt and pepper to taste.
Add the cream cheese and stir until well blended. Simmer for a few minutes until the texture becomes thick.
Put the chicken breasts back into the pan, then toss to coat with the delicious sauce.
Remove from the heat, then sprinkle freshly chopped parsley on top to garnish. Dish out!
Serve and enjoy!
Notes:
Feel free to use boneless chicken thighs for this recipe.
You can just use water if you do not have broth.
Place any leftovers in an airtight container, then put them in the fridge. They can last up to 5 days or 3 months in the freezer. Reheat for a few minutes before serving again.
