Creamy Mushroom Pasta

Creamy, cheesy, and buttery! This Creamy Mushroom Pasta is going to be a family favorite! Ready in just 20 minutes, this dish is loaded with scrumptious flavors. Enjoy!

Ingredients:

300 grams/ 10 ounces mushrooms, sliced 1/3 cm / 1/8-inch thick (white, cremini/swiss brown)
2 garlic cloves, finely chopped
160 grams/ 6 ounces fettuccine or linguine
1/3 c (30 grams) Parmesan, finely grated
1/2 c (125ml) chicken broth/stock, low sodium (or veg)
1/2 teaspoon salt and pepper, each
2 tablespoons (30 grams) unsalted butter
3/4 c (185ml) cream, heavy / thickened
1/2 tablespoon olive oil
1/2 c (125 ml) white wine, dry (or rose, sub more broth)

SERVING:

Parsley, roughly chopped (optional)
Extra Parmesan, for serving

Directions:

Refer to the directions provided on the package of pasta on how to cook it. Reduce the cooking time by one minute. Set aside about 1 cup of the pasta water and drain the rest.

Place a large skillet on the stove and turn the heat to high. Add butter and allow it to melt.

Add the mushrooms into the hot skillet, then saute for a few minutes until soft. Season with salt and pepper to taste.

Add the garlic, then saute for about a minute or until aromatic.

Pour in the wine, then scrape the bottom of the skillet to get the browned bits. Give it a good stir until well blended and simmer to remove the alcohol.

Stir in salt, pepper, cream, broth, and Parmesan cheese until well blended. Simmer the mixture for 2 more minutes while stirring constantly.

Add the cooked pasta into the skillet with the delicious sauce, then toss to coat. Add a bit of the reserved pasta water if the texture becomes too thick.

Remove from the heat, then sprinkle freshly chopped parsley and more cheese on top to garnish.

Serve and enjoy!

Notes:

Feel free to use your preferred type of pasta for this recipe.

You can add oil and butter to saute the mushrooms.

I highly suggest using freshly grated Parmesan cheese.

Place any leftovers in an airtight container, then put them in the fridge. They can last up to 3 days. Reheat for a few minutes before serving again.
