This Creamy Zucchini Soup is so comforting that you will crave it all the time! Enjoy the smooth texture of this soup in the comfort of your home! Just follow these easy steps and you are good to go! Ingredients:
3 c vegetable or chicken broth, preferably salt reduced
1 c water
2 garlic cloves, minced
3/4 c cream, heavy / thickened (or light)
1 large onion, chopped (brown, yellow, or white)
1 c milk any fat %
2 pounds zucchinis, cut into 1.5cm / 3/5-inch slices, larger ones halved
1 tablespoon olive oil or butter
GARNISH
black pepper
Cream
Finely shredded Parmesan
Directions:
Place a large pot on the stove and turn the heat to medium-high. Add oil and allow it to become hot.
Add the onions and garlic into the pot, then saute for about 3 minutes or until soft and aromatic.
Stir in the broth, water, and zucchini to the pot until well blended. Allow the mixture to boil.
Turn the heat down to medium, then cover the pot with the lid. Cook the zucchini for about 15 minutes or until tender.
Process the mixture with an immersion blender until the texture becomes smooth.
Add salt, pepper, milk, and cream. Stir everything until well blended. Dish out into serving bowls!
Top each serving with shredded Parmesan cheese, a pinch of pepper, and cream.
Serve right away. Enjoy!
Notes:
Place leftover soup in an airtight container, then put it in the fridge. Reheat for a few minutes before serving again.
