Using only a few pantry ingredients, these babies are ready in under 30 minutes. Serve immediately with syrup and butter and a glass of milk or coffee in the morning. Fluffy pancakes that taste excellent! I love these with some crushed nuts, chocolate syrup, or whipped topping. But you can eat them as is or with butter and simple syrup. Either way, these easy pumpkin pancakes are extraordinary! A must-have not only during fall but all year round! Let the kids decide, make a bunch because surely they will love these!
1 cup pumpkin pie filling
2 large eggs
2 cups of milk
2 cups all-purpose flour
4 teaspoons baking powder
1 tablespoon white sugar
1 teaspoon pumpkin pie spice
1 teaspoon ground cinnamon
1 pinch ground nutmeg
HOW TO MAKE EASY PUMPKIN PANCAKES
Step 1: Combine the eggs and pumpkin pie filling into a medium mixing bowl until well mixed. Add and stir the flour, baking powder, milk, pumpkin pie, sugar, nutmeg, and cinnamon until smooth.
Step 2: Heat oil in a griddle over medium-high heat.
Step 3: Once the oil is hot, add spoonfuls of batter and cook for about 3 to 4 minutes or until the sides are dry.
Step 4: Turn over and continue to cook the other side for 2 to 3 minutes more or until brown. Do this for the remaining ingredients.
Step 5: Once cooked, transfer the pancakes to a clean serving plate and serve. Enjoy!
