Made with hashbrowns, eggs, cheese, and sausage, this easy, simply delicious breakfast casserole is a meal in one.

This recipe is a real treasure, it is adaptable, can be made in advance, allergy-friendly, budget-friendly, can feed the crowd, and a guaranteed crowd favourite! Imagine all your favourite breakfast essentials in a pan. Now, that’s a winner!

Ingredients

16 oz. frozen hashbrowns defrosted (this is usually half a bag)
1 lb breakfast sausage browned
2 c. cheddar cheese shredded
6 Eggs
½ c. milk or cream
1 tsp kosher salt
½ tsp black pepper

How to make Easy Sausage Hashbrown Breakfast Casserole

Step 1: Prepare the oven. Preheat it to 350 degrees.

Step 2: Cook the sausage until brown.

Step 3: In a greased 9 x 11 or 9 x 9-inch casserole dish, layer the defrosted hash browns.

Step 4: Over the hash browns, layer the browned sausage.

Step 5: On top, sprinkle the cheese.

Step 6: Whisk the eggs with the seasonings, then pour it over the hash browns, sausage, and cheese layers.

Step 7: Place in the preheated oven and bake for about 40 to 45 minutes until the eggs are set.

Step 8: Remove from the oven and serve. Enjoy!

Notes:

1. If you prefer crispy hash browns, brown them first. If using fresh or frozen hash browns, ensure to defrost first before preparing the casserole.

2. You can make this casserole a night before, just assemble the until step 6, cover the casserole, and place it in the fridge. The next day, pop in the oven and bake as directed adding an extra 10 to 15 minutes to the cooking time.

3. For this recipe you can either sharp cheddar, Gruyere, Swiss, Gouda, or Mozzarella.

4. Easily double this recipe and bake in a 9 x 13-inch pan.

5. If you prefer a very thick layer of egg, add 2 more eggs to the custard and just add 10 minutes to the baking time.

6. Make sure to use a 9 x 9 or 11 x 7-inch pan to make this recipe. If not available, use what you have on hand and simply add 10 minutes to the baking time.
