Garlic Butter Shrimp Scampi

This will be love at first bite, for sure! This Garlic Butter Shrimp Scampi is going to be your new favorite! The combination of butter, lemon juice, herbs, and a lot more made the shrimp very delicious! Serve it over cooked linguine and you have yourself a meal to remember!

Ingredients:

1 1/2 pounds large shrimp, peeled and deveined, tails on or off
2 tablespoons freshly squeezed lemon juice
4 cloves garlic, minced
Salt and pepper, to taste
8 ounces linguine, optional
3 tablespoons fresh parsley, chopped
1/4 teaspoon crushed red pepper flakes
3/4 c unsalted Challenge Butter, cubed, divided

Directions:

Place a large pot with water on the stove and turn the heat to high. Allow the water to boil.

Add pasta and a bit of salt, then cook for a few minutes until al dente. Drain and rinse with cold water to stop the cooking process.

Place a large skillet on the stove and turn the heat to medium. Add 1/2 of the butter and allow it to melt.

Stir in the garlic and red pepper flakes into the skillet, then saute for about a minute or just until aromatic.

Add the shrimp, then turn the heat to medium-high. Sprinkle salt and pepper to season the shrimp. Cook for 3 minutes or until all sides turn pink.

Add lemon juice, parsley, and the rest of the butter. Stir to combine.

Top each serving of pasta with the shrimp.

Sprinkle freshly chopped herbs on top to garnish.

Serve and enjoy!

Notes:

Place any leftovers in an airtight container, then put them in the fridge. They can last up to 4 days. Reheat for a few minutes in the oven at over 275 degrees F before serving again.

Leftovers can last up to 3 months in the freezer.
