Ingredients:
Choose pasta
160 grams / 6 ounces long pasta – spaghetti, fettuccine
200 grams / 7 ounces short pasta like orecchiette, penne, macaroni
GARLIC BUTTER MUSHROOMS FOR PASTA
2 Garlic cloves, finely minced
1 tablespoon Olive oil
400 grams / 14 ounces Mushrooms, sliced 1/2 cm / 1/5-inch thick
1/2 c Freshly grated Parmesan cheese
50 grams / 3 tablespoons Unsalted butter separated
1/2 teaspoon Each salt and pepper
TO SERVE
Parmesan cheese, grated
Parsley, finely chopped
Directions:
For the Pasta:
Place a large pot with water on the stove and turn the heat to high. Allow the water to boil.
Add the pasta and a bit of salt into the boiling water, then cook for a few minutes until al dente.
Set aside 1 cup of the pasta water and drain the rest. Set aside the pasta.
For the Garlic Mushroom Sauce:
Place a large skillet on the stove and turn the heat to medium. Add butter and oil, then allow them to become hot.
Add the mushrooms into the hot skillet, then saute for about 5 minutes or until they turn golden brown. Season with salt and pepper to taste.
Add the rest of the butter and allow it to melt. Stir in the garlic and saute for about a minute or just until aromatic.
Put the cooked pasta into the skillet together with Parmesan cheese and 3/4 cup of pasta water. Toss everything until well incorporated. Season with more salt and pepper if you need to. Make sure to taste first before adding anything. Dish out!
Sprinkle Parmesan cheese and freshly chopped parsley over each serving.
